What's your favorite soul food recipe?

Could it be oven baked macaroni and cheese, collard greens cooked in smoked ham hops and fat back, slow cooked oxtails and southern fried chicken. What about catfish and grits for breakfast.

It seems soul food contents across the United States can be specific to the region of the country such as BBQ. Oxtails seem have strong influence in Texas whereas pork neck bones seem to have a southeastern base, such as the Carolina's and Georgia.
